Turmeric Scented Fish fillets with Oven roasted Cabbage and Mushrooms
Turmeric Scented Fish fillets
4 Large Swai fish fillets, or any white fish fillet
Salt and Pepper to taste
1.5 tsp turmeric
1.5 ground paprika
1 tsp ground coriander
In a small bowl mix turmeric, paprika, coriander and cinnamon and mix well. Prepare to season fish fillets by brushing it with a little olive oil. Season with turmeric spice mix then add salt and pepper to taste. The fillets I had were about 2 lbs, so I used up all of the mix to season them. You can adjust the amount accordingly. When ready to cook, heat 3 TB of olive oil in a Large fry pan and cook fish for 3-4 minutes on each side. Transfer to a serving platter.
Oven roasted Cabbage and Mushrooms
1 small head cabbage, cleaned and thinly sliced
10 large white button mushrooms, washed and thinly sliced
1-1.5 tsp ground cumin
salt and pepper to taste
3 Tb olive oil
Heat oven to 375 degrees.
In a roasting pan add the above ingredients and mix well. Roast in the oven uncovered for 20–30 minutes uncovered. Mine were done in about 20 minutes and had a little bit of caramelization . Thinly slicing the vegetables helps cook them faster in a shorter period of time. When done cooking transfer to a serving platter and serve with turmeric scented fish.
