Grilled Swai Fish with Oven Roasted Veggies

Grilled Swai Fish
2 lbs Swai fish fillets
2 lemons, juiced
4 large garlic cloves, pressed
1-2 tsp ground coriander (depending on how much you love coriander, I used 2 tsps)
salt and pepper to taste
olive oil to brush grill with

In a bowl, add fish fillets, lemon juice, pressed garlic, coriander, salt and pepper and marinade for 2 hours in the fridge.  When ready to grill, brush a grill pan with olive oil, add marinated fish and grill for 4-7 minutes on each side depending on thickness of your fillets.  Remove from grill and transfer to a serving plate.

Roasted Vegetables
3 lbs frozen green beans
1 red bell pepper, finely diced
8 large white button mushrooms, cleaned and finely diced
2-3 TB olive oil
salt and pepper taste

Heat oven to 375 degrees.
In a roasting pan add green beans, diced bell peppers, diced mushrooms, olive oil, salt and pepper and roast in the oven for 45 minutes at 375 degrees.  Check on the vegetables every 15 minutes to mix them together so they won’t stick to the bottom of the pan.  Remove from pan and transfer to a serving platter.
